Purchasing Whole or Half Beef

 Each beef purchased, whether a half or a whole, will be proccessed specifically to the buyer's preferences. While we can give you an ESTIMATE on the pounds of meat you can expect to receive from such a large purchase, each beef is going to be different and there is no way to tell you exactly the amount of each cut you will have. There are several factors that play into what you take home. You will have the option as to how thick you want your steaks, how many pounds per roast, having jerky made or having your meat dry-aged, etc. Each of these will effect the overall amount of meat, as well as , the number of certain cuts that you will receive. As mentioned throughout the website, every calf we offer is born and raised on our ranch. Calves are grassfed and finished on grain for 120 days. All calves are processed at a USDA certified processing plant. You can also have your steaks graded upon processing for an additional charge. WHAT TO EXPECT

How much meat will I get?

As previously mentioned, no two cattle are the same. Therefore, yields of two cattle are rarely the same. To help you have a better idea of what you can expect we have broken down an example for you. 

1000 lb. steer on the hoof (alive)

  • Approximately 61% of the live weight makes it to the rail

  • The approximate 39% loss is made up of the animal being bled and the hide, head, hooves, lungs and heart being removed.

  • While the carcass is on the rail it begins to loose moisture which causes it to shrink. This accounts for additional weight loss. Animals with a longer hanging time or dry-aged will incur a more substantial loss in available meat.

  • The removal of fat and bone account for an additional 18% loss

  • Total amount of retail cuts (estimate) 430 pounds
